Royal Icing Cookies

Making these unique and fabulously great decorations using egg white spray icing gives me immense pleasure. 

Classically, you first make so-called "sugar cookies". These do not change their shape during baking, provided that you stick to the recipe and process the dough really cold. 

The glaze is made very quickly and consists only of egg white, powdered sugar and a tiny bit of lemon juice. In addition, I prefer to use gel-based food coloring because it does not change the consistency. 

I don't wanna say anything else here. I could never get to the point anyway, because the possibilities of this great type of decoration is limitless. 

Christmas Cookies

Making Christmas cookies is one of my fondest childhood memories.

Every year we filled almost a whole room with "Guetzli", because we always produced easily over 30 varieties. So the house always smelled amazing and it was just wonderful to do this with my mother and sisters.

We have kept up the tradition and now my nieces also actively help. We all always look forward to the Christmas season and also try out a few new varieties every year. Vegan Guetzli have also made it into the assortment. 

My favorites include: Turmeric Pistachios, Orange Pecan Chocolate, Hazelnut Bread with Chocolate, Brunsli, Gingerbread Teddy Bears, Coconut Cranberry Chocolate and Nut Crunchies.

Royal Icing Christmas Cookies

These are cinnamon stars. 

We eventually got bored with just painting the stars all white, so nowadays we use the royal icing method.

Cinnamon stars are super suitable for this, because they also do not change their shape by baking. 

Cookies

I really like classic American cookies, especially when they are soft, but still have a chewy bite. 

There are numerous creations. My favorites are peanut butter oatmeal chocolate cookies. 

It is important not to be afraid to take the cookies out of the oven only after a short baking time, even if they appear to be still quite soft. They still harden considerably after that. 

Chestnut Cookies

For me, chestnuts not only fit in the fall, but throughout the year and in all kinds of varieties. 

These cookies remind me of soft amaretti. Simply delicious and highly addictive. 

I always make the chestnut puree myself. And although I don't really like alcohol in desserts, the little sip of kirsch adds the icing on the cake.
